1 lb. linguini, or other favorite pasta
2 TBSP olive oil
2 red onions, sliced
1 bunch Lacinato kale, chopped
8 oz goat cheese, or feta
Salt and pepper to taste
½ cup Olivier Balsamic vinegar
1. In a large sauté pan, place over medium heat and add olive oil. Add red onion and sauté for about 10 min. Lower heat and sprinkle salt over the top. Cook on low for about 30 minutes or until caramelized.
2. Meanwhile, get a large pot filled with water over high heat until boiling. Add a generous about of salt and boil the noodles until al dente. Drain and add back to the pot with a little olive oil to prevent sticking.
3. When the onions are caramelized add in chopped kale and cover for about 5-10 minutes, or until tender. Add in the cooked pasta, ¾ of the goat cheese, season with salt and pepper and add the balsamic. Cook down for a few minutes until syrupy.
4. Plate and finish with extra pepper and goat cheese.
